Baked Ziti- (Lazy Man’s Lasagna)
This recipe is perfect if you need a hearty, delicious meal for dinner, to bring to a party, potluck or to a friend and don’t have the time to prepare a lasagna. Don’t worry it’s just as delicious!
16 oz. penne or ziti pasta
3 cans 16 oz can Tomato sauce
1 can 6 oz. tomato paste
8 oz. ricotta cheeze
2 c shredded cheddar cheese
2 c shredded mozzarella cheese
1 c shredded parmesan cheese
1/2 lb ground beef
1/2 lb ground pork sausage (spicy or mild)
3 TBS cooking red wine
1/2 c chopped onion
2-3 minced garlic cloves
3 TBS olive oil
3TBS chopped parsley
Salt and Pepper to taste (we like crushed red pepper)
To make the marina sauce with meat;
Fry the onion and garlic in the olive oil until onions are just translucent and garlic is brown on the edges. Set aside. Cook the ground beef and pork sausage and drain excess fat. Mix the cooked onion and garlic with the meat. Place the tomato sauce and paste in a large skillet and add the browned meat, onions and garlic. Allow to simmer on low for 45 minutes and stir. Add the 3 TBS of cooking wine, parsley, salt and pepper. Always take a taste of your sauce to see if it needs a little more spice, remember it is your sauce!
While the sauce is cooking, boil water for the pasta and cook the pasta until firm. Drain the water and set aside. Use a greased 9×13 inch pan and layer the bottom of the pan with the meat sauce. Sprinkle the sauce with a layer of cheddar, mozzarella, Parmesan cheese and dot with ricotta cheese. Top the cheese with a layer of the pasta noodles. Cover the noodles with another layer of meat sauce. Then again repeat the steps again of covering the sauce with the cheeses and noodles. If you have enough ingredients repeat the steps. End with a layer of meat sauce and cheese.
Cover the 9×13 inch pan with aluminum foil and bake at 350 degrees for 30 minutes uncover and bake for another 15 minutes until the cheese bubbles and browns.
